Saler, poivrer et ajouter le piment\u00f3n. Bien m\u00e9langer.<\/p>\n<p style=\"text-align: center;\">Chauffer 2 belles cuill\u00e8res de cette pur\u00e9e puis y dissoudre hors du feu les feuilles de g\u00e9latine bien essor\u00e9es. Bien m\u00e9langer avant de re-m\u00e9langer avec le reste de pur\u00e9e de f\u00e8ves.<\/p>\n<p style=\"text-align: center;\">Monter les blancs en neige ferme et les rajouter en 4 fois \u00e0 la pur\u00e9e de f\u00e8ves en faisant en sorte de ne pas les faire retomber.<\/p>\n<p style=\"text-align: center;\">Mettre dans une poche munie d\u2019une douille cannel\u00e9e large et r\u00e9server au frigo au moins 3 voire 4 heures pour que la mousse prenne.<\/p>\n<p style=\"text-align: center;\"><em><u>Pour le dressage<\/u><\/em><\/p>\n<p style=\"text-align: center;\">C\u2019est aussi simple que de d\u00e9poser une rosace de mousse sur une tranche de chorizo et de superposer ainsi en appuyant l\u00e9g\u00e8rement 3 \u00e9l\u00e9ments comme sur les photos.
