Eplucher et ciseler l\u2019\u00e9chalote.<\/p>\n<p style=\"text-align: center;\">Faire chauffer l\u2019huile d\u2019olive dans une cocotte et y faire dorer 1 minute l\u2019\u00e9chalote avant d\u2019ajouter le c\u00e9leri rave et de laisser dorer 3 minutes en remuant. Ajouter le bouillon de l\u00e9gumes et couvrir \u00e0 hauteur les l\u00e9gumes d\u2019eau filtr\u00e9e. Cuire \u00e0 feu moyen \u00e0 demi-couvert pendant 20 minutes.<\/p>\n<p style=\"text-align: center;\">Ajouter alors la poire \u00e9pluch\u00e9e, \u00e9p\u00e9pin\u00e9e et d\u00e9coup\u00e9e en cubes et laisser cuire 10 minutes. Le c\u00e9leri rave doit alors \u00eatre bien tendre.<\/p>\n<p style=\"text-align: center;\">Hors du feu ajouter la pur\u00e9e d\u2019amande blanche et mixer pour obtenir un velout\u00e9 fin et mousseux. Ajouter si besoin un peu d\u2019eau chaude ou de bouillon pour ajuster la texture.
