Faire quelques entailles dans la peau qui entoure les ossobuccos pour \u00e9viter que la viande ne se r\u00e9tracte \u00e0 la chaleur.<\/p>\n<p style=\"text-align: center;\">Dans \u00bd cc* d\u2019huile d\u2019olive, faire dorer \u00e0 feu vif la viande sur les 2 faces et la r\u00e9server.<\/p>\n<p style=\"text-align: center;\">Rajouter \u00bd cc* d\u2019huile d\u2019olive dans la m\u00eame cocotte et y faire dorer l\u2019oignon avec une pinc\u00e9e de sel. Quand l\u2019oignon est bien dor\u00e9, ajouter les carottes et les tomates concass\u00e9es.<\/p>\n<p style=\"text-align: center;\">Laisser r\u00e9duire 5 minutes avant d\u2019ajouter la viande avec ses sucs. Ajouter un peu de noix de muscade et laisser cuire 40\/60 minutes, selon votre viande. Elle doit \u00eatre bien tendre et la sauce bien r\u00e9duite. Go\u00fbter et rectifier en sel et poivre.<\/p>\n<p style=\"text-align: center;\">Le plat est pr\u00eat \u00e0 servir mais son go\u00fbt s\u2019am\u00e9liore apr\u00e8s une nuit de repos.
