Laisser reposer ce m\u00e9lange 30 minutes dans un lieu ti\u00e8de, couvert d\u2019un linge propre et humide.<\/p>\n<p style=\"text-align: center;\">Ajouter le sel et le miel et commencer \u00e0 p\u00e9trir la p\u00e2te (avec mon p\u00e9trin Kenwood, 1 minute puissance 1 puis 3 minutes puissance 2).<\/p>\n<p style=\"text-align: center;\">Quand la p\u00e2te est bien souple et lisse, l\u2019\u00e9taler grossi\u00e8rement et r\u00e9partir les ch\u00e2taignes r\u00f4ties, p\u00e9trir d\u00e9licatement et former une boule de p\u00e2te.<\/p>\n<p style=\"text-align: center;\">D\u00e9poser la p\u00e2te dans un grand saladier l\u00e9g\u00e8rement huil\u00e9 et enrober l\u00e9g\u00e8rement la p\u00e2te d\u2019huile. Recouvrir d\u2019un torchon humide et laisser pousser pour environ 2 heures dans un endroit ti\u00e8de. Au bout de ce temps, mettre au frigo pour environ 12 heures pour favoriser une pouss\u00e9e lente.<\/p>\n<p style=\"text-align: center;\">Deux heures avant d\u2019enfourner votre pain, sortir la p\u00e2te du frigo et la laisser revenir \u00e0 temp\u00e9rature ambiante.<\/p>\n<p style=\"text-align: center;\">Prendre une cocotte en fonte ou en pyrex avec couvercle et la badigeonner l\u00e9g\u00e8rement d\u2019huile.
