Le m\u00e9lange doit atteindre 120-125\u00ba. Si vous n\u2019avez pas de\u00a0 thermom\u00e8tre, un indice\u00a0: la pr\u00e9paration \u00e9paissit d\u2019un coup et devient brun, c\u2019est le moment de stopper net la cuisson.<\/p>\n<p style=\"text-align: center;\">Verser dans un moule en silicone ou souple graiss\u00e9. Le moule ne doit pas \u00eatre trop grand car l\u2019id\u00e9al est d\u2019avoir une \u00e9paisseur d\u2019environ 2 centim\u00e8tres.<\/p>\n<p style=\"text-align: center;\">Saupoudrer de fleur de sel et laisser refroidir compl\u00e8tement \u00e0 temp\u00e9rature ambiante, environ 3 heures.<\/p>\n<p style=\"text-align: center;\">A l\u2019aide d\u2019un couteau bien aiguis\u00e9, d\u00e9couper en carr\u00e9s de 3 x 3 cm et les envelopper de papier sulfuris\u00e9 fa\u00e7on papillote pour \u00e9viter qu\u2019ils ne collent entre eux.
