Eh bien c\u2019est une sp\u00e9cialit\u00e9 catalane de la ville de Valls, un l\u00e9gume entre poireau et oignon nouveau que l\u2019on fait cuire entier avec s aterre et tout et tout au feu de bois puis qu\u2019on emballe dans du papier journal pour terminer la cuisson et d\u00e9guster accompagn\u00e9 de sauce romesco et de grillades au feu de bois.<\/p>\n<p><a href=\"https:\/\/comeconmigo.net\/wp-content\/uploads\/2022\/05\/Calcots-al-Horno-2.jpg\"><img loading=\"lazy\" class=\"size-medium wp-image-30563 aligncenter\" src=\"https:\/\/comeconmigo.net\/wp-content\/uploads\/2022\/05\/Calcots-al-Horno-2-169x300.jpg\" alt=\"\" width=\"169\" height=\"300\" srcset=\"https:\/\/comeconmigo.net\/wp-content\/uploads\/2022\/05\/Calcots-al-Horno-2-169x300.jpg 169w, https:\/\/comeconmigo.net\/wp-content\/uploads\/2022\/05\/Calcots-al-Horno-2-576x1024.jpg 576w, https:\/\/comeconmigo.net\/wp-content\/uploads\/2022\/05\/Calcots-al-Horno-2.jpg 600w\" sizes=\"(max-width: 169px) 100vw, 169px\" \/><\/a>La saison va de fin novembre \u00e0 mai, du coup avant que la saison ne s\u2019ach\u00e8ve, je voulais partager ma fa\u00e7on de les cuire au four parce que nous n\u2019avons pas toujours une chemin\u00e9e ou un barbecue \u00e0 port\u00e9e de main.<\/p>\n<p>Apr\u00e8s plusieurs tentatives, c\u2019est la m\u00e9thode que je partage aujourd\u2019hui qui fonctionne le mieux et qui se rapproche le plus de la m\u00e9thode traditionnelle. Vous me direz, oui mais moi des cal\u00e7ots je n\u2019en trouverai jamais\u2026 Pas grave, c\u2019est parfait aussi avec des poireaux moyens ou des oignons nouveaux qu\u2019on d\u00e9couvre sous un autre jour cuits de cette mani\u00e8re.<\/p>\n<p>Traditionnellement on garde terre, racines et hauts verts des feuilles mais pour la cuisson au four je vous conseille de les enlever car la place est limit\u00e9e. Le vert des feuilles permet de r\u00e9aliser <a href=\"https:\/\/comeconmigo.net\/crema-de-calcots-con-aceite-de-noras\/\">de d\u00e9licieux velout\u00e9s<\/a> par exemple).<\/p>\n<p>Je m\u2019excuse consomme pas les couches les plus ext\u00e9rieures du cal\u00e7ot, rincer sous l\u2019eau pour enlever la terre (en vrai on ne l\u2019enl\u00e8ve pas mais je ne me vois pas mettre de la terre dans le cal\u00e7ots sur la grille du four, bien ordonn\u00e9s pour qu\u2019ils cuisent de fa\u00e7on uniforme.<\/p>\n<p style=\"text-align: center;\"><a la l\u00e8che-frite avec du papier cuisson pour \u00e9viter que le jus de cuisson ne s\u2019\u00e9tale dans le four (c\u2019est pire que du caramel, faites confiance \u00e0 mon exp\u00e9rience ventilateur\u00a0 \u00e0 230\u00ba environ.<\/p>\n<p>Quand il est bien chaud, mettre les cal\u00e7ots dans la partie haute du four (3\/4 dans mon four comme vous pouvez voir sur les photos) et cuire pendant 15\/20 minutes.<\/p>\n<p>Au bout de ce laps de temps, les retourner et rajouter 10\/15 minutes de cuisson suppl\u00e9mentaires.<\/p>\n<p style=\"text-align: center;\">Les cal\u00e7ots doivent \u00eatre bien toast\u00e9s \u00e0 l\u2019ext\u00e9rieur et tendres \u00e0 coeur. \u00c7a d\u00e9pend beaucoup de l\u2019\u00e9paisseur de vos cal\u00e7ots et de la p\u00e9riode de
