Les \u00e9goutter et les mettre dans de l\u2019eau\u00a0 glac\u00e9e. Ensuite \u00f4ter la peau am\u00e8re et ne conserver que le coeur tendre. R\u00e9server.<\/p>\n<p style=\"text-align: center;\">Eplucher les oignons nouveaux en conservant le vert et les d\u00e9couper en touts petits cubes.<\/p>\n<p style=\"text-align: center;\">Dans une sauteuse, chauffer l\u2019huile d\u2019olive et y faire blondir les oignons.<\/p>\n<p style=\"text-align: center;\">Rincer dans une grande passoire le petit \u00e9peautre sous un filet d\u2019eau du robinet. L\u2019eau doit sortir limpide sous la passoire.<\/p>\n<p style=\"text-align: center;\">Chauffer le bouillon de l\u00e9gumes et le r\u00e9server au chaud.<\/p>\n<p style=\"text-align: center;\">Ajouter le petit \u00e9peautre \u00e0 l\u2019oignon et le faire dorer 2 minutes en remuant. Ajouter le vin blanc et le laisser s\u2019\u00e9vaporer compl\u00e8tement avant de cuire comme un risotto.<\/p>\n<p style=\"text-align: center;\">Verser une louche de bouillon et attendre qu\u2019il soit compl\u00e8tement absorb\u00e9 avant d\u2019en rajouter une nouvelle. Et ainsi de suite pendant une vingtaine de minutes, jusqu\u2019\u00e0 ce que le petit \u00e9peautre soit cuit \u00e0 votre go\u00fbt. Hors du feu, ajouter les petites f\u00e8ves et laisser r\u00e9chauffer.
