Saler l\u00e9g\u00e8rement. Faire dorer 2 minutes et verser le bouillon de l\u00e9gumes, la cr\u00e8me liquide. Amener \u00e0 \u00e9bullition et faire cuire \u00e0 feu doux environ 20 minutes, les ch\u00e2taignes doivent \u00eatre bien tendres.<\/p>\n<p style=\"text-align: center;\">Egoutter partiellement en r\u00e9servant le liquide de cuisson et mixer finement, en rajoutant du liquide progressivement, la texture ne doit\u00a0 pas \u00eatre trop \u00e9paisse. Rectifier en sel et poivre et r\u00e9server au chaud.<\/p>\n<p style=\"text-align: center;\">Peler ls pamplemousses \u00e0 vif et r\u00e9server les supr\u00eames d\u00e9couper en petits morceaux pour le service.<\/p>\n<p style=\"text-align: center;\">Au moment du service, r\u00e9partir les morceaux de pamplemousse dans les bols, verser le velout\u00e9 chaud par dessus.
